It starts with the dough. Our pizza dough is made with a natural wild yeast starter, and is allowed to naturally ferment and mature over a period of five days, where it achieves its wonderful flavor and consistency. We do this because the process not only makes the pizza dough taste better, but it is also much healthier for the body to digest!

Our homemade sauce is made from simple quality ingredients, never with any preservatives such as citric acid or calcium chloride.

Did you notice chicken on the menu? Our smoked chicken is truly one of a kind, and cooked with a process called “sous-vide”, which translates to “without air”. The chicken is vacuumed sealed and submerged in water, utilizing a machine that regulates temperature to a specific degree, ensuring that the meat is always cooked to perfection, moist and tender, and is never overdone. Then we roast it in our ovens, giving it a rich, flavorful finish.
